I want to make it so that when you become injured the whole world desaturates. Is there a way to control all of my actor's colors at the same time or do I have to preform the desaturation on a case by case basis?

Here is a quick video I put together showing what happens:

I put a orange/yellow actor over the entire screen, with a alpha of 0 and a blending mode of Additive. When the player touches the coin, the alpha of the actor is switched to 1.

Maybe a global attribute that changes, and everything in the scene has the colours set to this attribute?

You could put a colored actor over the whole scene with an initial alpha of 0 and then when your event happens you can change the alpha (and the blending mode) of the actor to make it color the whole scene.

The interpolate behaviour would also work well with the examples given to you.
