No, you can't customize the built-in behavior. But you can make your own keyboard. It's a fair amount of work, but it can be done. Basically, you concatenate a text attribute (e.g. change attribute game.Word to game.Word..game.Letter) and have an actor for each letter of the alphabet that has the rule When Touch is Pressed --> change attribute game.Letter to self.Name (each letter actor should be named A, B, C, etc.).
