how can you make your character break things only with his head.

  No need to watch a tut. simply if the actor is above enemy and collides with enemy destroy

  And likewise for his head, if he's below the enemy/platform and they collide then his head obviously hit it

  use the head as a separate actor then move the head so it collides with the thing your destroying then animate the thing your destroying so it looks like it's dying the kill your actor.
