Frist I wanna ask that does the GS In App purchase work in Mac Appstore ? If it works I think we can simply test IAp on Mac instead of iOS devices, You should set up product ID and everything correctly on both GS and iTunes connect, and create a test user as well, Then publish you game for mac to test if the iAp works then publish for iOS.

But it's just thinking I haven't test it yet...

    First of all. No, GS doesn't support IAP for MAc App Store. Secondly even if they did. you could not test iOS iAP through a mac app. It just simply would not work.
