So it seems like you are wanting it to be in portrait mode. I believe this will solve your issue. Go into your first scene then once in the scene select the scene tab located next to the game tab. Once the scene tab is selected go down to the last attribute where it says "Autorotate". Expand that down and make sure "Portrait" is selected and both "Landscape Left" and "Landscape Right" are unchecked. Do this for all your scenes. This should solve your issue! Let me know how that works out for you!
Even if he were to do what you stated above, if what I posted in the above post is done then it won't matter what you select in the publishing page because the rules in the app will over run what you are telling it to do during publishing.
@KillerPenguinStudios I don't think it matters which way you do it but if you have a lot of scenes it can save a of of time if you make your selection on the Publishing page.

Or you can just select portrait or landscape on the publishing page
